I came up with this recipe for cinnamon-applesauce pancake poppers that can be made ahead and frozen. Just pop a few in the microwave or oven and you have a quick and filling breakfast. You can dip them in syrup or apple butter, but my kids even like them plain. They’re packed with healthy ingredients like oats and applesauce to help keep you full until lunchtime.
